Thermomix Sticky Date Pudding
Ingredients
Pudding
200g pitted dates
300g water
2tsp bicarbonate of soda
170g raw sugar
60g butter softened
2 eggs
1tsp vanilla extract
170g self-raising flour
Sauce
250g full fat pouring cream
200g brown sugar
130g butter roughly chopped
1sp vanilla extract
Method
Pudding
1.Preheat the oven to 180 degrees c. Lightly grease a loaf tin then line with baking paper.
2.Place dates into mixing bowl and chop 8sec/speed 7. Scrape down sides of bowl.
3.Add water and heat 5min/100degrees c/speed 1, then mix 10sec/speed 4.
4.Add bicarb soda and combine 3sec/speed 2. Set aside. Thoroughly clean and add dry mixing bowl.
5.Place sugar into mixing bowl and mill 10sec/speed 9.
6.Insert butterfly. Add butter and mix 10sec/speed 4. Scrape down sides of bowl. Mix for further 1min/speed 4, or until light and creamy.
7.With butterfly rotating on speed 4, add eggs one at a time through hole in mixing bowl lid. Remove butterfly
8.Add vanilla, flour and reserved date mixture and combine 5sec/speed 4.
9.Pour mixture into prepared tin and bake for 50 minutes, or until golden brown. Leave pudding in tin for 10 minutes before turning into serving plate
Sauce
Place all sauce ingredients into mixing bowl and cook 5-7min/80degrees c/speed 4 or until desired consistency is achieved. Pour source over pudding then serve warm

Do you find you enjoy cooking main dishes or desserts more? Why/why notI enjoy cooking main dishes more because I find them more fun to cook and usually require less effort than cooking a desert.
What main cooking process was used during preparation? E.g. whisking, folding, rubbing in method. Usually the main cooking process that is used during the preparation of this dessert are mixing and folding. But since I used a thermomix the main process was mixing
Why is it important to have a healthy balance of these types of dishes in our diets? It is important to have a healthy balance of sugary dessert’s in our diets because they are unhealthy to eat all the time because of the high amounts of sugar in them. Meaning if they are eaten all the time it can lead to serious health problems like obesity.
Any tips for beginners who want to try and cook this dish? A tip for beginners who want to try and cook this dish is stick to the recipe/method as much as possible because it is very easy and straight forward if you do so
